Don’t feed us etiquette — just give us a reason to eat fish with our hands.
This time, we’re setting the table for a proper Baltic-style feast built around everything salty, smoky, and unapologetically delicious.
What’s on the table:
We’ll be serving mackerel in various styles of smoking, herring, sardines, fermented vegetables, and hot potatoes with dill — all placed in the centre of the table and meant to be shared. If we’re lucky, there might even be some smelt.
To accompany the feast, we will pour three wines — not in tasting portions — to show you just how beautifully wine can work with oiliness, smoke, and salt. Consider this a full celebration of the receptors rather than a technical exercise.
All of this around one round table, in an intimate setting, with conversation that turns wine from a drink into an experience.
