Dear hedonists,

Prosecco is often treated as something simple, light, and slightly unserious.
A cheerful glass before dinner. A safe party choice. Bubbles that do not ask too many questions.

This evening is here to change that.

Together with Riccardo Poletti from Cantine Collalto, we will explore Prosecco Superiore as a wine of place, texture, history, and gastronomic potential — far beyond the easy stereotype of “just bubbles”.

Cantine Collalto is located in the historic hills of Conegliano Valdobbiadene DOCG, one of the most important territories for Prosecco Superiore. Through a curated selection of wines, we will taste different expressions of Glera, different levels of dryness, vineyard character, lees influence, and the way Prosecco can move from aperitif to a serious pairing wine.

And yes, we will pair it properly.

Our kitchen will prepare a selection of small dishes and snacks designed to show how Prosecco works with food: freshness, saltiness, texture, creaminess, seafood, cheese, and delicate savoury flavours.

This is not a lecture about “sparkling wine for beginners”.
This is an evening for people who want to understand why Prosecco, when made seriously, deserves a better reputation.
