What happens when you put two geeks at the same table — one obsessed with wine, the other with oysters?
On September 10, Oecumene joins forces with Gentle Shrimp for a tasting dedicated equally to oysters, wine, and everything that happens when the two meet.
This is not simply oysters served with wine. It is a proper tasting of both.
Alexander from Gentle Shrimp will select three different oysters species, each with its own origin and character. In every round, we’ll taste two oysters of the same type and explore where they come from, what makes them different, and how origin and growing conditions influence their flavour, texture, salinity and personality.
On the wine side, Oecumene founder and Champagne Master Anna Levkovich will choose one wine for each oyster.
The result is three rounds, three oyster varieties and three very different wines.
Oysters have a fairly established wine rulebook — acidity, minerality, bubbles, something crisp and maritime. And yes, there may be a reassuringly classic match somewhere along the way.
But we’re much more interested in what happens beyond the obvious.
We’ll explore how a wine can change the perception of an oyster, amplify one characteristic while revealing another, and sometimes create a combination that makes very little sense on paper — until you taste it.
Some pairings will feel immediately logical. Others are deliberately designed to challenge the idea of what you are supposed to drink with oysters.
In every round, Alexander will guide us through the oyster, Anna through the wine, and together we’ll look at the pairing itself: why it works, what changes from one sip to the next, and what happens when two seriously good products meet outside the textbook.
This is a tasting for anyone who wants to go beyond simply eating great oysters and drinking great wine — and understand both a little better in the process.
